I cut avocados nearly every day during the main harvest on my San Diego hillside, and the moment the knife opens the flesh the clock starts. Browning is the enzyme polyphenol oxidase reacting with oxygen and the phenolic compounds already present in the fruit. The reaction is fastest at room temperature and at a neutral pH. Once you understand those two triggers, prevention becomes a matter of limiting oxygen, lowering the surface pH, and keeping the fruit cold.
Whole unripe avocados stay green because the skin is intact. The problem appears only after the flesh is exposed. A half that sits uncovered on the counter can show noticeable brown within thirty minutes. The same half, treated correctly and refrigerated, can stay usable for one to two days.
Browning is an enzymatic reaction, not spoilage. Surface brown is safe to scrape away. The goal is simply to slow the reaction long enough to finish the fruit before the color and flavor decline.
On our Exotic Fruits and Vegetables plots I once left a tray of halved Hass uncovered while I finished another task. By the time I returned the cut surfaces had already darkened. The next batch received a quick brush of lime juice, tight plastic wrap pressed directly against the flesh, and an immediate trip into the cooler. Practical barriers that actually work
The most reliable home method combines three steps. First brush or squeeze a thin layer of lemon or lime juice over every exposed surface. The citric acid drops the local pH and slows the enzyme. Second press plastic wrap directly onto the flesh so that no air remains between the plastic and the avocado. Third refrigerate immediately. Cold further reduces enzyme activity.
Vacuum sealing removes oxygen more completely than plastic wrap and can keep halves green for up to five days in tests. Few kitchens have a sealer ready for a single leftover half, so the plastic-wrap-plus-citrus method remains the everyday standard. A light brush of olive oil can substitute for citrus if no lemon or lime is available; the oil forms a physical barrier against air.
Press the plastic wrap firmly against the cut surface until every air pocket disappears. A loose cover does almost nothing. Refrigerate right after sealing.
Leaving the pit in a half reduces the exposed area slightly but does not stop browning on the surrounding flesh. The pit itself has no special chemical effect. Submerging the cut side in water or oil slows oxygen contact yet can make the texture watery or greasy. Both methods work for short periods but are less practical than the citrus-and-wrap combination.

For guacamole the same principles apply. Press plastic wrap directly onto the surface of the finished dip so that no air sits on top. A thin layer of citrus juice or a light film of water poured over the surface before sealing also works; pour the liquid off before serving. Refrigerate and use within a day for best color and flavor.
What to avoid and what to expect
Salt speeds browning. Avoid sprinkling salt directly onto a cut surface that you intend to store. Onion juice has been shown in some tests to slow the enzyme, yet the flavor transfer is strong and the method is rarely practical. Blanching the cut surface damages texture and does not reliably stop later browning. Alcohol dips and vitamin E oil are effective in controlled tests but unnecessary for ordinary kitchen use.

What happens if you skip the citrus and rely only on plastic wrap? Browning still slows, but a thin brown layer often appears within a day. Adding the acid buys noticeable extra time.

Do not store cut avocado at room temperature for more than a couple of hours. Warmth accelerates the enzyme reaction and shortens the usable window sharply.
In the packing shed I move any fruit that will not be used the same day into the cooler as soon as it is cut. The combination of acid, tight wrap and cold has become automatic. An avocado that stays green until the next meal is simply one that received the three basic barriers before oxygen had a chance to do its work.
