I have grown cherimoya on coastal San Diego ground for more than a decade and learned most of the useful lessons the hard way. The tips that follow come from trees that fruited, trees that stalled, and a few that never recovered from early mistakes.

Cherimoya, Annona cherimola, is also called chirimoya. It thrives where summers stay mild and winters deliver a modest chill. The following practices keep the trees productive once they leave the nursery stage.

Plant in full sun with at least six to eight hours of direct light. Inland sites benefit from light afternoon shade during the hottest weeks to prevent leaf scorch.

Soil drainage ranks first among planting decisions. Cherimoya tolerates a range of textures yet fails quickly in waterlogged ground. I amend heavy soil with compost and coarse sand and plant on slight mounds when drainage is questionable. pH between 6.5 and 7.5 keeps nutrient uptake steady.

Water deeply every ten to fourteen days during active growth so moisture reaches eighteen inches. Allow the surface to dry slightly between irrigations. Stop watering once leaves drop in late winter and resume only when new growth appears. Overwatering in cool weather is the fastest route to root rot.

Never water a dormant cherimoya. Cool, wet soil invites Phytophthora and can kill feeder roots before spring growth begins.

Fertilizer follows a simple schedule. Apply a balanced 8-8-8 every three months from midwinter through harvest. Increase the amount each year until the tree begins to bear. Mature trees need roughly four ounces of actual nitrogen per inch of trunk diameter annually. Excess nitrogen pushes leafy growth at the expense of flowers.

Have you ever watched a young tree put on three feet of soft growth and then set almost no fruit? Heavy nitrogen late in the season often produces that result.

Hand-pollination remains the single most reliable way to increase fruit set outside the native range. Flowers open female for about thirty-six hours, then switch to male. Collect pollen in the afternoon and transfer it to female-stage flowers the same evening with a small soft brush. Repeat every day during the bloom period.

Pruning shapes the tree early. Train two main scaffold branches at about two feet above the ground and shorten them to two feet the first dormant season. In later years remove two-thirds of the previous season’s growth, leaving six or seven strong buds. An open canopy improves light penetration and reduces mealybug habitat.

Cherimoya needs 50 to 100 chilling hours below 45 F. Insufficient chill delays leaf-out and reduces flowering the following spring.

Cold protection matters for trees under three years old. Young tips die near 29 F and mature wood suffers below 25 F. I wrap trunks with foam insulation and cover the canopy with frost cloth whenever a hard freeze is forecast. Coastal San Diego rarely stays that cold for long, yet one night can set a young tree back a full season.

What happens if a newly planted tree sits in a frost pocket? Even a brief dip can kill the growing points and force the plant to restart from lower buds, delaying fruit by a year or more.

Pests stay limited when spacing and air flow are correct. Mealybugs cluster on new growth and fruit stems; a strong water spray or insecticidal soap controls light infestations. Snails climb the trunk at night; copper bands or ducks keep them in check. Good sanitation under the canopy reduces both problems.

  1. Choose a well-drained site with full sun and room for a twenty-five-foot canopy.
  2. Water deeply during growth and withhold water during dormancy.
  3. Hand-pollinate every flower during the bloom window.
  4. Prune annually to keep the canopy open and the scaffolds strong.

Harvest when the skin lightens from dark green to yellowish-green and the fruit yields slightly to thumb pressure. Pick in the morning and finish ripening at room temperature for one to three days. Once soft, refrigerate and eat within two days. The flesh turns brown quickly once overripe.

A fruit left on the tree until the skin just began to soften once developed the fullest aroma I have recorded. The flesh tasted of banana, pineapple, and a faint strawberry note that disappeared in fruit picked even two days earlier.

I once delayed harvest on an entire branch because the fruit still felt firm. Several split open overnight after a warm spell and attracted ants. Now I check every two days once color change begins.

Have you tested the give of the skin with a light thumb press rather than a squeeze? The lighter touch prevents bruising while still revealing readiness.

Seedling trees take four to seven years to fruit; grafted trees of named cultivars such as Bays or White can produce in two to three years. Both benefit from the same cultural practices once established. Flavor remains excellent on well-managed trees regardless of origin.

The cumulative effect of these steps is steady production. Trees that receive consistent water, timely pollination, and annual pruning continue to increase yield into the second decade. Neglect any one of them and the crop declines the following season.

    If I manage to get a decent yield using these hand-pollination steps, my biggest worry is the short shelf life. Cherimoyas go from rock hard to mush in about three days on the counter. I paid twelve dollars a pound at the Santa Monica Farmers Market last year, so wasting even one fruit is out of the question. Have you tried freezing the pulp? I read that the flesh oxidizes and turns brown almost instantly once exposed to air. I wonder if vacuum sealing with a bit of ascorbic acid or lemon juice would prevent that browning. Dehydrating seems impossible because of the high moisture and sugar content, they would just turn into sticky leather. What is the best way to preserve a surplus if my tree actually produces more than I can eat fresh?

      Regarding your question about preserving a surplus, you are entirely correct about the rapid oxidation of cherimoya flesh. Once the skin is broken and the pulp is exposed to oxygen, polyphenol oxidase enzymes trigger rapid browning. Freezing is indeed the most effective long-term storage method, but it requires careful preparation to maintain flavor and color.

      To freeze cherimoya successfully, scoop the flesh out of the skin and meticulously remove every seed, as the seeds contain toxic alkaloids and can impart a bitter taste if damaged. Immediately mix the pulp with pure lemon juice or a 1% ascorbic acid solution. Use approximately one tablespoon of lemon juice per cup of pulp.

      Vacuum sealing is highly recommended because it removes the residual oxygen that causes freezer burn and enzymatic browning. Pack the treated pulp into vacuum bags, seal them, and lay them flat in the freezer. Properly vacuum-sealed cherimoya pulp maintains its quality at 0 F for up to six months. When you defrost it, do so slowly in the refrigerator, and use it immediately in smoothies, ice creams, or sorbets, as the texture will be softer than fresh fruit. Dehydrating is indeed difficult due to the high sugar levels, resulting in a sticky product that spoils quickly.

      Thanks for the detailed breakdown on the ascorbic acid ratio. I will definitely try the freezer method with the vacuum sealer once my trees start bearing. I bought some food-grade ascorbic acid powder online last month for canning, so I will use that instead of lemon juice to avoid altering the actual flavor of the custard apple.
