A durian (Durio zibethinus) looks like one solid object until you open it, and then it turns into a small anatomy lesson. The fruit that Southeast Asia calls the “king of fruits” is built from four parts that matter to anyone growing or eating it: the spiny husk, the internal chambers, the creamy flesh, and the large seeds buried inside that flesh. Knowing which part is which changes how you open the fruit, what you throw away, and what you can actually cook.
Husk, Thorns, and Seams
The outer shell is the husk, technically the rind or pericarp, and it accounts for most of the fruit’s weight. It runs 0.3 to 1.5 cm thick, tough and fibrous, white on the inside and olive to yellow-brown outside, armored with hard pyramidal spines about an inch long. Those thorns are not decorative, and I have the scars to prove that a ripe durian dropping onto a bare hand is a real hazard.
Handle a whole durian with a folded towel or thick gloves. The spines are stiff enough to break skin under the fruit’s own weight, and a 4-pound Monthong landing thorn-first draws blood.
Inside, the husk is divided into chambers called locules, and a durian almost always has five locules, marked on the outside by five faint seam lines that run from stem to base. Those seams are the dehiscence zones, the weak sutures where the carpels join, and they are your map for opening the fruit. Reading the Seam Lines
Opening a durian is a matter of following its own structure. Score along a seam, then lever the halves apart rather than sawing through the middle.
- Set the fruit stem-up and locate the five seams radiating from the base.
- Slip a knife tip into the blossom end, where the seams converge, and make a shallow cut along one seam.
- Push your thumbs into the cut and pull the segment open along its natural split.
- Work around the remaining seams, freeing one locule at a time.
Did you ever try to cut a durian straight across like a melon? That is the fast route to a mangled fruit and a slipped blade, since the husk is hardest exactly where there is no seam. The central pith, or axis, runs up the core and holds the locules together, and once the seams open it stays behind with the husk.
A ripe fruit gives at the seams under light thumb pressure, which is why growers judge readiness partly by how easily the sutures start to part. Force a green one and you will be sawing through solid husk for ten minutes.
Flesh and Seeds
The part you eat is the aril, a fleshy structure that grows from the funiculus of each seed and swells outward until it wraps the seed completely. The aril is what people mean by durian flesh, and it makes up only about 20 to 30 percent of the whole fruit by weight. Its color shifts by cultivar from pale cream through yellow to deep gold, and its texture at ripeness is soft custard that smells of caramel with a savory, almost oniony undertone.
Each locule holds one to seven arils, and each aril usually surrounds a single seed. A poorly pollinated flower gives you a lopsided fruit with fat flesh on one side and flat, seedless failures on the other.
Color and thickness of the aril tell you a lot about the variety. My D2, sold as Dato Nina, runs deep yellow and bittersweet, while Monthong sits paler and milder, and the flesh thickness over the seed is what durian buyers pay a premium for.
When you next hold a durian, can you tell from the outside whether the arils inside are thick or thin? The seam spacing and the fruit’s shape hint at it, and a lopsided fruit usually means uneven flesh from patchy pollination.

The Seeds Are Not Trash
Buried in each aril sits a large brown seed with a thin, light-brown skin, and a medium fruit carries five to eight of them. Raw, they are a problem. Durian seeds are toxic when raw because they hold cyclopropene fatty acids, so they must be boiled at least 15 minutes, roasted, or fried before eating. Cooked, they turn starchy and mild, closer to taro, chestnut, or a waxy potato.
Do not snack on raw durian seeds or let a curious child try one. The cyclopropene compounds and oxalate in the raw seed can cause real harm in quantity, and cooking is what makes them safe.
I boil mine 20 minutes, then peel and pan-fry them in a little oil with salt. The first batch I ever cooked came out chalky because I rushed the boil, so give them the full time. Have you ever thrown away the seeds without knowing they were a second crop hiding inside the first?
Every Part Has a Use
A durian is mostly the part you cannot eat, since husk, seed, and core together make up roughly 65 to 70 percent of the fruit by weight. That inedible bulk is not dead weight if you have somewhere to put it. The husk dries into a decent solid fuel, breaks down into mulch and organic fertilizer, and researchers now turn it into biochar and activated carbon for water filtration through pyrolysis.
- Dried husk as slow-burning fuel or fire starter.
- Chopped husk as mulch and weed suppression around the trees.
- Husk flour and biochar studied for antioxidants and water treatment.
- Cooked seeds as a starchy side, boiled or roasted.
On my place the spent husks go straight back under the durian trees as a coarse mulch, where they hold moisture and slowly feed the soil. The smell lingers for a day or two, so I keep that pile well away from the house.
Using the husk and seeds means a single fruit feeds the kitchen and the orchard both. Very little of a durian has to reach the compost heap if you plan for it.
