The plant behind the fruit

The tree is a tropical giant. In the wild, Durio zibethinus can reach 130 feet, though orchard trees are kept far shorter for harvest access. It sits in the mallow family, Malvaceae, alongside okra and cotton.

Around thirty species make up the genus Durio, and only a handful bear fruit anyone eats. Nearly all commercial durian comes from the single species zibethinus. The name traces to the Malay word duri, meaning thorn, which describes the pod plainly rather than poetically.

Durian flowers open after dark and rely heavily on cave-dwelling fruit bats that feed on the nectar. Remove those bats from an area and fruit set drops, which is one reason wild trees and orchard trees behave differently.

Each pod divides into five chambers, and the edible part is the aril, the soft flesh wrapped around each seed. The rest, meaning the spined husk and the pithy core, is inedible bulk.
